Ingredients

  • 4 medium zucchini
  • 1 tablespoon olive oil
  • 1 pound cooked chicken, shredded rotisserie chicken is a great shortcut
  • 1/2 cup enchilada sauce red or green, your preference
  • 1/2 cup shredded Monterey Jack cheese divided
  • 1/4 cup shredded cheddar cheese divided
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and freshly ground black pepper to taste
Optional toppings
  • chopped cilantro
  • sour cream
  • salsa
  • avocado slices

Equipment

  • Baking Sheet
  • Skillet
  • Spoon

Method

  1. Preheat your oven to 375°F (190°C). Wash the zucchini thoroughly. Cut each zucchini in half lengthwise. Use a spoon to carefully scoop out the seeds and some of the flesh, creating a boat-like cavity. Be careful not to scoop too deep, as you want to maintain the structural integrity of the zucchini.

  2. Place the hollowed-out zucchini halves on a baking sheet. Drizzle them lightly with a little olive oil and season with a pinch of salt and pepper. Bake for 10-12 minutes, or until they are slightly softened but still hold their shape.

  3. While the zucchini is par-baking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

  4. Add the shredded cooked chicken to the skillet with the onions and garlic. Stir in the enchilada sauce, chili powder, and cumin. Season with salt and pepper to taste. Cook for about 5 minutes, allowing the flavors to meld together and for the mixture to heat through.
