  • 1 (12-inch) pre-made flatbread or pizza crust
  • 1 cup shredded cooked chicken rotisserie chicken is ideal for convenience
  • 1/2 cup Caesar dressing plus more for drizzling
  • 1/4 cup grated Parmesan cheese plus more for topping
  • 1 cup chopped romaine lettuce
  • 2 tablespoons thinly sliced red onion (optional)
  • 2 tablespoons croutons lightly crushed (optional)
  • Salt and freshly ground black pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven while it preheats. Place the pre-made flatbread or pizza crust on a baking sheet or directly onto the preheated pizza stone.

  2. In a medium bowl, combine the shredded cooked chicken with 1/2 cup of Caesar dressing. Stir until the chicken is evenly coated. Season with salt and freshly ground black pepper if desired, remembering that Caesar dressing and rotisserie chicken can already be quite flavorful.

  3. Spread the chicken and dressing mixture evenly over the surface of the flatbread, leaving a small border around the edges. Sprinkle 1/4 cup of grated Parmesan cheese over the chicken mixture.

  4. Carefully transfer the baking sheet with the flatbread into the preheated oven. Bake for 8-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Keep an eye on it to prevent burning, as oven temperatures can vary.
  5. Once the flatbread is out of the oven, let it cool for a minute or two. Top generously with the chopped romaine lettuce. If you’re using them, scatter the thinly sliced red onion and lightly crushed croutons over the lettuce.
