- Prepare the chicken: Ensure the chicken breast is fully cooked (baked, boiled, or rotisserie) and finely shredded or diced. Place in a medium mixing bowl.
- Prepare the avocado base: Add the mashed avocado, minced red onion, and chopped celery to the bowl with the chicken.
- Season the mixture: Pour in the lime juice and Dijon mustard. Sprinkle with cumin, salt, and black pepper. Mix gently until everything is just combined. Avoid overmixing to keep some texture.
- Prepare the lettuce wraps: Gently wash and thoroughly pat dry the butter lettuce leaves. Separate them carefully to maintain their cup shape; large, intact leaves are best for wrapping.
- Assemble the roll-ups: Lay each lettuce leaf flat on a clean surface. Spoon approximately 1/4 to 1/3 cup of the chicken avocado salad mixture into the base of the leaf.
- Roll or fold: Fold the sides of the lettuce leaf inward, then tightly roll from the bottom up, similar to wrapping a burrito. Serve immediately to maintain the lettuce crispness.
Notes
For an extra kick, add 1 teaspoon of hot sauce or a pinch of cayenne pepper to the filling. These are best served immediately, as the avocado will brown if stored for too long.
