Ingredients
  

For the Salad Filling
  • 2 cups Cooked Chicken Breast Shredded or finely diced
  • 1 Ripe Avocado Mashed
  • 1/4 cup Red Onion Finely minced
  • 1/4 cup Celery Finely chopped
  • 2 tablespoons Lime Juice Freshly squeezed
  • 1 teaspoon Dijon Mustard
  • 1/2 teaspoon Cumin
  • To taste Salt and Black Pepper
For Wrapping
  • 8 large Butter Lettuce Leaves Iceberg or Romaine hearts can also be used

Instructions
  1. Prepare the chicken: Ensure the chicken breast is fully cooked (baked, boiled, or rotisserie) and finely shredded or diced. Place in a medium mixing bowl.
  2. Prepare the avocado base: Add the mashed avocado, minced red onion, and chopped celery to the bowl with the chicken.
  3. Season the mixture: Pour in the lime juice and Dijon mustard. Sprinkle with cumin, salt, and black pepper. Mix gently until everything is just combined. Avoid overmixing to keep some texture.
  4. Prepare the lettuce wraps: Gently wash and thoroughly pat dry the butter lettuce leaves. Separate them carefully to maintain their cup shape; large, intact leaves are best for wrapping.
  5. Assemble the roll-ups: Lay each lettuce leaf flat on a clean surface. Spoon approximately 1/4 to 1/3 cup of the chicken avocado salad mixture into the base of the leaf.
  6. Roll or fold: Fold the sides of the lettuce leaf inward, then tightly roll from the bottom up, similar to wrapping a burrito. Serve immediately to maintain the lettuce crispness.

Notes

For an extra kick, add 1 teaspoon of hot sauce or a pinch of cayenne pepper to the filling. These are best served immediately, as the avocado will brown if stored for too long.
