Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts (about 6-8 ounces each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
For the Avocado Spread
  • 1 ripe avocado
  • 1 tablespoon fresh lime or lemon juice
  • 1/4 teaspoon salt
  • Pinch black pepper
For the Sandwich
  • 4 slices your favorite bread (sourdough, whole wheat, or multigrain work well)
  • 2 tablespoons butter, softened
  • 4 slices cheese (cheddar, provolone, or Monterey Jack are great choices)

Method
 

  1. Pat the chicken breasts dry with paper towels. In a small bowl, combine olive oil, salt, pepper, and garlic powder. Rub the mixture evenly over both sides of the chicken breasts. Heat a skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-8 minutes per side, or until cooked through and no pink remains in the center. Remove from skillet and let rest for 5 minutes before shredding or slicing.

  2. While the chicken is resting, halve the avocado, remove the pit, and scoop the flesh into a small bowl. Add the lime or lemon juice, salt, and pepper. Mash with a fork until mostly smooth with a few small chunks remaining for texture.

  3. Spread the softened butter evenly on one side of each slice of bread. Lay two slices of bread, butter-side down, in the skillet (you can use the same skillet you cooked the chicken in after wiping it clean, or a separate one).

  4. On top of the unbuttered side of each bread slice in the skillet, layer one slice of cheese.

  5. Evenly distribute the shredded or sliced cooked chicken over the cheese. Then, spread a generous layer of the avocado mixture over the chicken. If using, add your optional red onion or tomato slices.

  6. Place the remaining two slices of bread, butter-side up, on top of the avocado mixture to complete the sandwiches.

  7. Cook over medium heat for 3-5 minutes per side, or until the bread is golden brown and toasted, and the cheese is fully melted and gooey. You may need to adjust the heat to prevent burning while ensuring the inside heats through.
  8. Carefully remove the sandwiches from the skillet, slice in half if desired, and serve immediately.

Notes

Sandwiches are best enjoyed fresh as the avocado can brown over time. However, if you have leftovers, wrap them tightly in plastic wrap or place them in an airtight container in the refrigerator for up to 1 day.
To reheat, place the sandwich in a non-stick skillet over low to medium-low heat, covered, until warmed through and the cheese is re-melted. Alternatively, you can reheat it in a toaster oven or a regular oven at 350°F (175°C) for about 5-10 minutes, watching carefully to prevent burning. For best results, reheat on both sides.
While not ideal for optimal texture, you can freeze fully assembled and cooled sandwiches. Wrap them individually in plastic wrap and then in foil. To reheat from frozen, remove the foil and bake in a 350°F (175°C) oven until heated through, then remove the plastic wrap for the last few minutes to toast the bread if desired. It's generally recommended to make fresh for the best avocado flavor and texture.
