- In a medium-sized mixing bowl, add the rolled oats, chia seeds, ground flaxseed, and a pinch of salt. Stir these dry ingredients together thoroughly to ensure they are evenly distributed.1 cup rolled oats, 1/4 cup chia seeds, 1/4 cup ground flaxseed, Pinch salt
- To the bowl with the dry ingredients, add the almond butter (or your chosen nut/seed butter), honey or maple syrup, and vanilla extract.1/2 cup almond butter, 1/3 cup honey or maple syrup, 1 teaspoon vanilla extract
- Using a sturdy spoon or a spatula, begin to mix all the ingredients together. Continue mixing until a thick, cohesive dough-like mixture forms. It should be sticky enough to hold together when rolled. If the mixture seems too dry and crumbly, add a teaspoon or two of water or a little more nut butter. If it's too wet, add a tablespoon more oats.
- If you are using mini chocolate chips, gently fold them into the mixture at this stage. Ensure they are evenly dispersed throughout the dough.1/4 cup mini chocolate chips
- Cover the bowl with plastic wrap or a lid and place it in the refrigerator for about 30 minutes. This chilling period helps the mixture firm up, making it much easier to roll into balls without sticking excessively to your hands.
- Once chilled, remove the mixture from the refrigerator. Scoop out approximately one tablespoon of the mixture at a time. Roll the mixture between the palms of your hands to form compact, bite-sized balls. If the mixture is still a bit sticky, you can lightly dampen your hands with water.
- Your Chia Flaxseed Energy Balls are now ready to enjoy! You can consume them immediately or store them for later.
Notes
Best stored in an airtight container in the refrigerator for up to 1-2 weeks. Can be frozen for up to 2-3 months.
