Ingredients
  

  • 1/4 cup Unsalted butter (1 stick)
  • 1 10 ounce package Miniature marshmallows
  • 1 teaspoon Vanilla extract
  • 6 cups Chex cereal (such as Rice Chex, Chocolate Chex, or a mix)
  • 1/2 cup Chocolate chips (milk or semi-sweet)
  • 1/4 cup Peanut butter chips (optional, for extra flavor)
  • Football-shaped sprinkles, candy stars, or colored icing (optional for decoration)

Method
 

  1. Lightly grease a 9x13 inch baking pan or line it with parchment paper. This will prevent the bars from sticking and make them easier to remove and cut.
  2. In a large microwave-safe bowl, combine the butter and miniature marshmallows. Microwave on high for 1 minute, stir, then microwave in 30-second intervals, stirring after each, until the marshmallows are completely melted and smooth. Be careful not to overcook the marshmallows, as they can become tough.

  3. Stir in the vanilla extract into the melted marshmallow mixture. This will enhance the overall sweetness and add a lovely aroma.

  4. Add the Chex cereal to the bowl with the melted marshmallow mixture. If using, stir in the chocolate chips and peanut butter chips now. Stir gently but thoroughly until the cereal and chips are evenly coated. Work quickly, as the marshmallow mixture will start to set.

  5. Spoon the mixture into your prepared baking pan. Using a lightly greased spatula or your hands (lightly greased with cooking spray or butter), firmly press the mixture evenly into the pan. For the best results, ensure it's pressed down tightly to create firm bars.
  6. If you're feeling festive, sprinkle football-shaped sprinkles, candy stars, or drizzle melted colored icing over the top while the bars are still warm and slightly sticky. This step is purely for fun and adds a special touch, especially for themed parties.

  7. Allow the Chex Football Treat Bars to cool and set completely at room temperature for at least 30 minutes, or until firm. For faster setting, you can place them in the refrigerator for about 15-20 minutes.
  8. Once set, lift the bark out of the pan using the parchment paper, or cut directly in the pan. Cut the bars into your desired squares or rectangles. Serve immediately and enjoy the delicious crunch!
