Instructions
- Prepare the cherries: If using frozen cherries, ensure they are completely thawed. Pit and roughly chop the cherries into small, bite-sized pieces.
- Dice the vegetables: Finely dice the red onion and mince the jalapeño pepper. Remember to wear gloves when handling the jalapeño, and remove seeds and membranes for a milder salsa.
- Combine dry ingredients: In a medium mixing bowl, combine the chopped cherries, diced red onion, minced jalapeño, and chopped cilantro.
- Prepare the dressing: In a small separate bowl, whisk together the fresh lime juice, honey (or agave nectar), salt, and black pepper until well combined.
- Mix and chill: Pour the lime dressing mixture over the cherry mixture and gently toss everything together until evenly coated. Taste and adjust seasoning as needed (more lime, salt, or heat).
- Rest before serving: Cover the salsa and refrigerate for at least 30 minutes. This allows the flavors to meld together beautifully. Serve chilled with tortilla chips, grilled fish, or chicken.
Notes
This salsa is best made the same day it is served, but can be stored in an airtight container in the refrigerator for up to 2 days. The flavor deepens slightly overnight.
