Ingredients
  

  • 8 ounce cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup cherry pie filling store-bought or homemade
  • 1 sheet frozen puff pastry, thawed about 9.5 ounces, thawed according to package directions
  • 1 tablespoon milk or egg wash for brushing
  • 1 tablespoon granulated sugar for sprinkling (optional)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, beat the softened cream cheese and 1/4 cup granulated sugar together until smooth and creamy. Beat in the egg yolk and vanilla extract until well combined.

  3. Lightly flour a clean surface. Unfold the thawed puff pastry sheet. If it’s a large rectangle, you can cut it in half to make two smaller danishes, or use it whole for one large one.

  4. If making individual danishes, cut each pastry sheet into quarters to create smaller rectangles. On each pastry piece, use a sharp knife to lightly score a border about 1/2 inch from the edges, being careful not to cut all the way through. This border will help create the crust. Then, lightly score diagonal lines within the border to create a "frame" for the filling, leaving the center open.
  5. Spoon about 1-2 tablespoons of the cream cheese mixture into the center of each pastry square, spreading it within the scored inner rectangle.

  6. Spoon about 1 tablespoon of cherry pie filling over the cream cheese mixture on each danish.

  7. Gently fold the corners of the pastry "frame" towards the center, overlapping slightly, or leave as is to create a rustic look. Brush the exposed pastry edges with milk or egg wash for a golden finish. If desired, sprinkle the edges with an additional tablespoon of granulated sugar.

  8. Place the prepared danishes on the lined baking sheet. Bake for 15-20 minutes, or until the puff pastry is golden brown, puffed, and cooked through.
  9. Let the Cherry Cheese Danish cool on the baking sheet for a few minutes before transferring them to a wire rack to cool further. Dust with powdered sugar just before serving, if desired.

Notes

Leftover Cherry Cheese Danish can be stored at room temperature for up to 2 days if they contain no perishable fillings beyond the cream cheese, but for optimal freshness, especially with the cream cheese, it's best to refrigerate them. Store them in an airtight container or wrap them tightly in plastic wrap. They will stay good in the refrigerator for up to 3-4 days.
To reheat, place the danishes on a baking sheet and warm them in a preheated oven at 300°F (150°C) for 5-8 minutes, or until heated through and the pastry is slightly crisped again.
