  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons almond flour
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon Italian seasoning
  • pinch red pepper flakes (optional, for a little heat)
  • 1/4 cup finely chopped pepperoni (about 10-15 slices)
  • 1 large egg lightly beaten

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium mixing bowl, combine the shredded mozzarella cheese, shredded cheddar cheese, and grated Parmesan cheese. Add the almond flour, garlic powder, onion powder, Italian seasoning, and red pepper flakes (if using). Stir these ingredients together until they are well incorporated.

  3. Pour the lightly beaten egg into the cheese and dry ingredient mixture. Add the finely chopped pepperoni to the bowl.

  4. Gently mix all the ingredients together with a spoon or spatula until a cohesive dough-like mixture forms. Be careful not to overmix; you want the cheeses to start binding, but the pepperoni should still be distinct.
  5. Using a tablespoon or a small cookie scoop, scoop rounded portions of the mixture onto the prepared baking sheet. You can gently shape them into small discs or leave them as they are, knowing they will spread slightly while baking. Aim for about 1 to 1.5 inches in diameter for each bite.
