Ingredients

  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 1/4 cup chopped green onions plus more for garnish
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Pinch cayenne pepper optional, for a touch of heat
  • 1/4 cup crumbled cooked bacon optional, for extra flavor

Equipment

  • Medium-sized mixing bowl
  • Whisk or electric mixer
  • Small oven-safe baking dish or ramekin
  • Saucepan

Method

  1. Begin by preheating your oven to 350°F (175°C). This gentle heat is perfect for allowing all those wonderful cheese flavors to meld together.
  2. In a medium-sized mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Use a whisk or electric mixer on low speed to beat them together until the mixture is smooth and well combined. Ensure there are no lumps of cream cheese remaining for the silkiest base.
2 (8 ounce) packages cream cheese, softened, 1 cup sour cream, 1/2 cup mayonnaise
  3. Next, add the shredded cheddar cheese and Monterey Jack cheese to the bowl. Stir them in gently until they are evenly distributed throughout the cream cheese mixture. The cheeses will start to melt and become beautifully incorporated as it bakes.
1/2 cup shredded cheddar cheese, 1/4 cup shredded Monterey Jack cheese
  4. Now, stir in the chopped green onions and fresh chives. These add a fresh, vibrant counterpoint to the richness of the cheese.
1/4 cup chopped green onions, 2 tablespoons chopped fresh chives
  5. Season the dip with garlic powder, onion powder, black pepper, and a pinch of cayenne pepper if you desire a subtle kick. Whisk everything together until all the seasonings are thoroughly mingled.
1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon black pepper, Pinch cayenne pepper
  6. If you’re using crumbled bacon, gently fold it into the dip at this stage. This is an optional but highly recommended addition for an extra layer of savory flavor.
    1/4 cup crumbled cooked bacon
  7. Pour the Cheesy Hissy Fit Dip mixture into a small oven-safe baking dish or ramekin. An 8x8 inch dish or a few individual ramekins work wonderfully.
  8. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the dip is bubbly around the edges and the cheese is gloriously melted and slightly golden on top.
  9. Once baked, carefully remove the dish from the oven. Let it sit for a few minutes to allow it to cool slightly before serving. This also helps the dip set up a little further.
  10. Garnish with a few extra chopped green onions or chives before serving. Serve hot with your favorite dippers!
1/4 cup chopped green onions, 2 tablespoons chopped fresh chives

Notes

For longer storage, the dip can be frozen. Allow the dip to cool completely, then transfer it to a freezer-safe container or a heavy-duty freezer bag. It can be frozen for up to 1-2 months. Be aware that the texture may change slightly upon thawing, as some of the moisture can separate.
To reheat refrigerated dip, place it in a microwave-safe dish and heat in 30-second intervals, stirring between each, until warmed through. Alternatively, you can reheat it gently in a saucepan over low heat, stirring constantly. If reheating from frozen, thaw it in the refrigerator overnight first. You can then reheat as described above. For a crisper top, you can briefly broil the reheated dip for a minute or two.
