Method
- In a medium bowl, toss the bite-sized chicken pieces with 1 tablespoon of olive oil, minced garlic, Italian seasoning, salt, and pepper. Ensure each piece is evenly coated.1 pound boneless, skinless chicken breasts or thighs, 2 tablespoons olive oil, 4 cloves garlic, 1/2 teaspoon dried Italian seasoning, Salt and freshly ground black pepper
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.2 tablespoons olive oil, 1 pound boneless, skinless chicken breasts or thighs
- In the same skillet (no need to clean it), add the chicken broth over medium heat. Scrape up any browned bits from the bottom of the pan, as these add great flavor. Let the broth simmer for about 1 minute.1/4 cup chicken broth
- Reduce the heat to low. Stir in the heavy cream and bring to a gentle simmer. Gradually add the shredded cheese, stirring constantly until it's melted and the sauce is smooth and creamy. Be careful not to let the sauce boil rapidly once the cheese is added.1/4 cup heavy cream, 1/2 cup shredded cheddar cheese
- Return the cooked chicken to the skillet with the cheesy garlic sauce. Stir gently to coat the chicken evenly. Let it simmer for another 1-2 minutes until the chicken is heated through and the sauce has thickened slightly. If desired, stir in chopped fresh parsley or a pinch of red pepper flakes for a little extra kick.1 pound boneless, skinless chicken breasts or thighs, chopped fresh parsley, red pepper flakes
- While the chicken mixture simmers, warm your tortillas. You can do this by wrapping them in a damp paper towel and microwaving them for about 30-60 seconds, or by gently warming them in a dry skillet over low heat for a minute per side.4 large flour tortillas or wraps
- Spoon a generous portion of the cheesy garlic chicken mixture into the center of each warm tortilla. Fold in the sides of the tortilla, then roll it up tightly from the bottom.
- Serve your Cheesy Garlic Chicken Wraps immediately. They are delicious on their own or can be served with a side salad or your favorite dipping sauce.
Notes
Storing: Allow the Cheesy Garlic Chicken Wraps mixture to cool completely before storing. Once cooled, transfer any leftover chicken and sauce to an airtight container and refrigerate for up to 3-4 days. If you have assembled the wraps before storing, wrap each individual wrap tightly in plastic wrap and then place them in an airtight container. These will last for 1-2 days in the refrigerator.
Reheating: For the Chicken Mixture: Stovetop: Reheat the chicken and sauce mixture in a skillet over medium-low heat, stirring occasionally, until heated through. You may need to add a splash of chicken broth or cream if the sauce has thickened too much. Microwave: Place the chicken and sauce in a microwave-safe dish, cover loosely, and microwave on medium power, stirring halfway through, until hot. For Assembled Wraps: Oven/Toaster Oven: For a crisper wrap, reheat assembled wraps in a preheated oven or toaster oven at 350°F (175°C) for about 8-10 minutes, or until heated through. Be sure to wrap them in foil to prevent the tortilla from drying out. Microwave: Reheat assembled wraps in the microwave for 30-60 seconds, or until warmed through. This method will result in a softer tortilla.
Freezing: It's best to freeze the chicken and sauce mixture separately from the tortillas for optimal results. Once cooled, portion the mixture into freezer-safe containers or bags. It can be frozen for up to 2-3 months. When ready to use, thaw overnight in the refrigerator and reheat as directed above. You can then add it to fresh, warmed tortillas.
