  • 0.25 teaspoon black pepper
  • 1 cup marinara sauce (your favorite store-bought or homemade)
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup diced fresh tomatoes (about 1 Roma tomato)
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon balsamic glaze (optional, for drizzling)

Method
 

  1. Preheat your oven to 400°F (200°C). In a medium bowl, toss the cubed chicken with olive oil, Italian seasoning, garlic powder, salt, and pepper until evenly coated.

  2. For an extra layer of flavor and texture, heat a large oven-safe skillet over medium-high heat. Add the seasoned chicken and cook for 2-3 minutes per side, just until lightly browned. You don't need to cook it through at this stage. If you don't have an oven-safe skillet, transfer the seared chicken to a 9x13 inch baking dish.

  3. Pour the marinara sauce over the chicken in the skillet or baking dish, ensuring it's mostly covered.

  4. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the marinara sauce and chicken.

  5. Transfer the skillet or baking dish to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly, with some golden brown spots.
  6. While the chicken bakes, gently combine the diced fresh tomatoes and chopped fresh basil in a small bowl.

  7. Once the chicken is cooked, remove it from the oven. Spoon the fresh tomato and basil mixture over the cheesy chicken. Drizzle with balsamic glaze, if using. Let it rest for a few minutes before serving.
