- Preheat your oven to 400°F (200°C). In a medium bowl, toss the cubed chicken with olive oil, Italian seasoning, garlic powder, salt, and pepper until evenly coated.1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes, 1 tablespoon olive oil, 1 teaspoon Italian seasoning, 0.5 teaspoon garlic powder, 0.25 teaspoon salt, 0.25 teaspoon black pepper
- For an extra layer of flavor and texture, heat a large oven-safe skillet over medium-high heat. Add the seasoned chicken and cook for 2-3 minutes per side, just until lightly browned. You don't need to cook it through at this stage. If you don't have an oven-safe skillet, transfer the seared chicken to a 9x13 inch baking dish.1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- Pour the marinara sauce over the chicken in the skillet or baking dish, ensuring it's mostly covered.1 cup marinara sauce (your favorite store-bought or homemade)
- Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the marinara sauce and chicken.0.5 cup shredded mozzarella cheese, 0.25 cup grated Parmesan cheese
- Transfer the skillet or baking dish to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly, with some golden brown spots.
- While the chicken bakes, gently combine the diced fresh tomatoes and chopped fresh basil in a small bowl.0.25 cup diced fresh tomatoes (about 1 Roma tomato), 2 tablespoons chopped fresh basil
- Once the chicken is cooked, remove it from the oven. Spoon the fresh tomato and basil mixture over the cheesy chicken. Drizzle with balsamic glaze, if using.
