  • 2 pounds boneless, skinless chicken thighs or breasts, cooked and shredded or diced
  • 1 cup heavy whipping cream
  • 1 cup full-fat sour cream
  • 4 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese (optional, for a slightly less strict carnivore approach)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt and freshly ground black pepper to taste
  • 1 tablespoon butter or ghee for greasing the baking dish

Method
 

  1. Preheat your oven to 375°F (190°C). Generously grease a 9x13 inch baking dish with butter or ghee.

  2. If you haven't already, cook your chicken. This can be done by boiling, baking, roasting, or pan-frying. Once cooked, allow it to cool slightly, then shred it using two forks or dice it into bite-sized pieces. Place the prepared chicken evenly into the bottom of the greased baking dish.

  3. In a medium-sized bowl, combine the heavy whipping cream, full-fat sour cream, and softened cream cheese. Whisk these ingredients together until they are smooth and well incorporated.

  4. Add the garlic powder, onion powder, salt, and freshly ground black pepper to the cream mixture.   5. Pour the creamy sauce evenly over the shredded or diced chicken in the baking dish. Ensure all the chicken pieces are coated in the sauce.
