- Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with non-stick spray.
- In a small bowl, whisk together the melted butter, brown sugar, cinnamon, and vanilla extract until a thick paste forms.
- Place the nectarine halves cut-side up in the air fryer basket in a single layer. Spoon the butter-sugar mixture evenly over the cut surface of each nectarine half.
- Air fry for 8 to 10 minutes, checking at the 7-minute mark. The nectarines are done when they are tender when lightly pierced with a fork and the tops are bubbling and caramelized.
- Carefully remove the nectarines from the air fryer basket using tongs. Let them cool for 2 minutes before serving.
- Serve warm, either as a side dish or topped with a scoop of vanilla ice cream for a simple dessert.
Notes
Ensure the nectarines are not overly ripe, as they may fall apart during the high-heat cooking process. If using frozen nectarines, thaw them slightly first.
