Ingredients
  

  • 2 tablespoons Instant Coffee ensure it's instant, not ground, for proper whipping
  • 2 tablespoons Granulated Sugar this helps stabilize the whipped foam
  • 2 tablespoons Caramel Sauce for the whipped mixture, plus extra for drizzling
  • 2 tablespoons Hot Water to dissolve the coffee and sugar
  • 1 cup Milk your preference: dairy, almond, oat, or soy all work wonderfully
  • A generous handful Ice Cubes for serving

  • Whipped cream for garnish
  • Extra caramel drizzle for garnish
  • Sprinkle of sea salt for garnish
  • Caramel candy crushed for garnish

  • Electric hand mixer or whisk

Method
 

  1. In a medium-sized bowl, combine the instant coffee, granulated sugar, and 2 tablespoons of caramel sauce. Add the 2 tablespoons of hot water.

  2. Using an electric hand mixer or a whisk (though a hand mixer will be significantly faster and easier), begin whipping the mixture. Start on a low speed and gradually increase to high. Continue whipping for approximately 5-8 minutes, or until the mixture becomes thick, pale, and forms stiff peaks. It should resemble a fluffy, caramel-colored mousse. If using a whisk, this process will take considerably longer and require vigorous arm work!
  3. Fill a serving glass generously with ice cubes. Pour your chosen milk over the ice, leaving about 1-2 inches of space at the top for the whipped topping.

  4. Gently spoon the caramel whipped coffee mixture over the milk. Be generous! You want a substantial cloud of foamy goodness.
  5. Drizzle extra caramel sauce over the whipped topping. For an extra touch of decadence, add a dollop of whipped cream and perhaps a sprinkle of flaky sea salt to balance the sweetness, or top with a crushed caramel candy.

Notes

The whipped caramel coffee mixture can be stored in an airtight container in the refrigerator for up to 1-2 days. It may deflate slightly but can be frothed up again briefly before serving. The milk and ice should be prepared fresh each time.
