  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • to taste salt

  • 1/4 cup grated Parmesan cheese Optional

Method
 

  1. Preheat your oven to 400°F (200°C). Wash your broccoli thoroughly and then cut it into bite-sized florets. If the stems are thick and tender, you can peel them and slice them thinly to use as well – they're just as delicious when roasted!

  2. In a large bowl, combine the broccoli florets. Drizzle them generously with the olive oil, ensuring each floret is lightly coated. Add the minced garlic, salt, and freshly ground black pepper. Toss everything together well so that the seasonings are evenly distributed across the broccoli. For an extra layer of flavor, you can add a pinch of red pepper flakes at this stage if you enjoy a little spice.

  3. Spread the seasoned broccoli in a single layer on a large baking sheet. It’s important to avoid overcrowding the pan; if your florets are piled too high, they will steam rather than roast, and you won’t achieve that desirable crispiness. If necessary, use two baking sheets.

  4. Place the baking sheet(s) in the preheated oven. Roast for 15-20 minutes, or until the broccoli is tender when pierced with a fork and the edges are slightly caramelized and golden brown. The exact roasting time will depend on the size of your florets and your oven.
  5. If you’re using Parmesan cheese, remove the baking sheet from the oven a minute or two before the broccoli is fully done. Sprinkle the grated Parmesan over the hot broccoli and return it to the oven for the remaining minute or two, just until the cheese is melted and slightly golden.
