- Prepare the sausage: In a large skillet over medium heat, brown the breakfast sausage, breaking it up with a spoon until fully cooked. Drain off excess grease and set the sausage aside in a warm bowl.
- Prepare the eggs: In a large bowl, whisk together the eggs, milk (or cream), salt, and pepper until well combined and slightly frothy.
- Cook the eggs: Melt the butter in the same large, non-stick skillet over medium-low heat. Pour in the egg mixture. As the edges begin to set, gently push the cooked egg inward toward the center, tilting the pan to allow uncooked egg to flow underneath.
- Finish the eggs: Continue cooking, gently stirring and folding until the eggs are mostly set but still slightly moist and fluffy. Remove from heat immediately to prevent overcooking.
- Warm the tortillas: Heat the tortillas individually in a dry skillet over medium heat for about 30 seconds per side until soft, or wrap them in a damp paper towel and microwave for 45 seconds.
- Assemble the taco bar: Arrange all components on a large platter or individual serving dishes: scrambled eggs, cooked sausage, warm tortillas, shredded cheese, pico de gallo, diced avocado, cilantro, and hot sauce. Let guests build their own perfect breakfast tacos.
Notes
For extra richness, reserve a small amount of the sausage grease and use it instead of butter for scrambling the eggs. You can substitute chorizo for breakfast sausage for a spicier flavor profile.
