  • 4 tablespoons homemade or store-bought pesto
  • 4-6 ounces cheese thinly sliced or shredded. A mix of mozzarella and Gruyere is divine, or try sharp cheddar for a bolder flavor.
  • 2 tablespoons unsalted butter softened

Method
 

  1. Lay out your four slices of bread on a clean surface. Spread one tablespoon of pesto evenly over one side of each of the four slices. This is the side that will kiss the pan, infusing the bread with that incredible pesto flavor.

  4. Evenly spread the softened butter over the outside of each sandwich, from crust to crust. This is crucial for achieving that perfect golden-brown, crispy exterior that makes a grilled cheese so irresistible.

Notes
