  • 3 ripe peaches pitted and finely diced
  • 1/2 red onion finely diced
  • 1 jalapeño pepper finely minced, seeds removed for less heat
  • 1/4 cup fresh cilantro chopped
  • 1 lime juice only
  • 1 teaspoon honey or agave nectar optional, for added sweetness
  • 1/4 teaspoon salt or to taste

  1. Prepare all peaches by pitting and dicing them into small, uniform pieces. Place the diced peaches into a medium mixing bowl.
  2. Finely dice the red onion. Mince the jalapeño pepper, ensuring you remove the seeds and white membranes if you prefer a milder salsa.
  3. Add the diced red onion, minced jalapeño, and chopped cilantro to the bowl with the peaches.
  4. Squeeze the juice from one fresh lime over the mixture. Add the salt and the optional honey/agave nectar.
  5. Gently toss all ingredients together until well combined. Be careful not to mash the peaches.
  6. Taste the salsa and adjust seasoning as needed. Add more salt, lime juice, or honey if desired.
  7. For the best flavor, cover the salsa and chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld.

Notes

This salsa is best served fresh. If making ahead, wait to add the lime juice until about an hour before serving to keep the peaches looking bright. Pairs wonderfully with grilled pork or white fish.
