Ingredients
  

  • 1 cup rolled oats old-fashioned or quick oats will work
  • 1/2 cup peanut butter creamy or crunchy, your preference
  • 1/3 cup honey or maple syrup for a vegan option
  • 1/4 cup chocolate chips mini or regular, milk, dark, or semi-sweet
  • 2 tablespoons protein powder vanilla or unflavored works best
  • 1 tablespoon chia seeds optional, for added texture and nutrients
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

  1. In a medium-sized mixing bowl, add the rolled oats, protein powder, chia seeds (if using), and a pinch of salt. Stir these dry ingredients together until they are well combined. This ensures an even distribution of the protein powder throughout the mixture.

  2. To the bowl with the dry ingredients, add the peanut butter, honey or maple syrup, and vanilla extract.

  3. Using a sturdy spoon or spatula, mix all the ingredients together until a thick, sticky dough forms. It's important to mix until everything is thoroughly combined and no dry pockets of oats or protein powder remain. If the mixture seems too dry and crumbly, you can add a teaspoon of water or a little more peanut butter to help it come together. Conversely, if it's too wet, add a tablespoon more oats.
  4. Gently fold in the chocolate chips. Be careful not to overmix at this stage, as you want to keep the shape of the chocolate chips intact.

  5. Take about 1 tablespoon of the mixture at a time and roll it between your palms to form small balls, roughly 1 inch in diameter. If the dough is sticking to your hands, you can lightly dampen them with water or dust them lightly with a bit of extra oat flour.
  6. Place the rolled protein balls onto a plate or a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up. This chilling step is crucial for them to hold their shape and achieve the perfect chewy texture.

Notes

Store in an airtight container in the refrigerator for up to one week. Can also be frozen for up to 2-3 months.
