Method
- Preheat your oven to 375°F (190°C). Lightly grease a small oven-safe dish or skillet (an 8x8 inch dish or a small cast-iron skillet works perfectly).
- In a large bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix thoroughly with a spatula or electric mixer until smooth and well combined.8 ounces cream cheese, softened, 1/2 cup sour cream, 1/2 cup mayonnaise
- Add the shredded cheddar cheese and Monterey Jack cheese to the cream cheese mixture. Stir until all the cheeses are evenly distributed.1 cup shredded cheddar cheese, 1/2 cup shredded Monterey Jack cheese
- Gently fold in the finely diced jalapenos (remember to wear gloves when handling them!), crumbled cooked bacon, and chopped red onion. These are the key flavor components that mimic the classic popper experience.4-6 fresh jalapenos, stemmed, seeded, and finely diced, 2-3 slices cooked bacon, crumbled, 1/4 cup finely chopped red onion
- Stir in the garlic powder, salt, and freshly ground black pepper. Taste the mixture and adjust seasonings as needed. If you like it spicier, add a pinch of cayenne pepper.1/4 teaspoon garlic powder, salt and freshly ground black pepper
- Spoon the mixture evenly into the prepared oven-safe dish. Smooth the top with your spatula.
- Sprinkle the top with a little extra shredded cheese and crumbled bacon, if desired, for added flavor and delicious gooeyness. Place the dish in the preheated oven.additional shredded cheese, extra crumbled bacon
- Bake for 20-25 minutes, or until the dip is heated through, bubbly around the edges, and the cheese on top is melted and lightly golden brown.
- Let the dip rest for about 5 minutes before serving. This allows it to cool slightly and thicken just enough, making it perfect for dipping. Serve hot with your favorite dippers.
Notes
Store any leftover dip in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in a low oven or microwave.
