  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese

  • 4-6 fresh jalapenos, stemmed, seeded, and finely diced adjust to your spice preference
  • 2-3 slices cooked bacon, crumbled
  • 1/4 cup finely chopped red onion
  • 1/4 teaspoon garlic powder
  • salt and freshly ground black pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a small oven-safe dish or skillet (an 8x8 inch dish or a small cast-iron skillet works perfectly).
  2. In a large bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix thoroughly with a spatula or electric mixer until smooth and well combined.

  3. Add the shredded cheddar cheese and Monterey Jack cheese to the cream cheese mixture. Stir until all the cheeses are evenly distributed.

  4. Gently fold in the finely diced jalapenos (remember to wear gloves when handling them!), crumbled cooked bacon, and chopped red onion. These are the key flavor components that mimic the classic popper experience.
