- Preheat oven to 350°F (175°C). Grease and flour a 12-inch pizza pan or line with parchment paper.
- For the crust: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Press the dough evenly onto the prepared pizza pan.
- Bake the crust for 10-12 minutes, or until the edges are lightly golden brown. Let the crust cool completely on the pan.
- For the frosting: Beat the softened cream cheese and butter until smooth. Gradually beat in the powdered sugar and vanilla extract until light and fluffy. If the frosting is too thick, add milk/cream 1 tablespoon at a time until spreadable.
- Once the crust is completely cool, spread the cream cheese frosting evenly over the top, leaving a small border for the 'crust' edge.
- Arrange the mixed fresh fruit artistically over the frosting. Slice and serve immediately, or chill for up to 4 hours before serving.
Notes
This pizza is best assembled just before serving to prevent the crust from getting soggy and to keep the fruit looking vibrant. Feel free to use seasonal fruits of your choice.
