Ingredients

  • 2 tablespoons Cooked vegetables finely diced (such as spinach, bell peppers, onions, or mushrooms)
  • 1 tablespoon Cooked meat finely chopped (optional, e.g., bacon, ham, or sausage)
  • Salt to taste
  • Black pepper to taste
  • Cooking spray or parchment paper liners for the air fryer basket/muffin tin

Method
 

  1. Preheat your air fryer to 300°F (150°C).
  2. Lightly grease a standard muffin tin with cooking spray or line it with parchment paper liners. If using a metal muffin tin, ensure it fits comfortably in your air fryer basket. If your air fryer is very large, you might be able to fit two muffin tins.

  3. In a medium bowl, crack the 6 large eggs. Add the 1/4 cup of milk, salt, and pepper. Whisk vigorously until the egg yolks and whites are well combined and slightly frothy. Don't over-whisk if you prefer a less airy texture, but a good combination is key.

  4. Gently stir in the 1/4 cup shredded cheese, 2 tablespoons of your finely diced cooked vegetables, and the optional 1 tablespoon of finely chopped cooked meat. Distribute the fillings evenly throughout the egg mixture. Ensure vegetables and meats are pre-cooked, as they won't have time to cook through in the air fryer.

  5. Carefully pour the egg mixture into the prepared muffin tin cups, filling each about two-thirds to three-quarters full. This prevents them from overflowing during cooking.
  6. Place the muffin tin carefully into the preheated air fryer basket. Cook for 10-14 minutes, or until the egg bites are set and a toothpick inserted into the center comes out clean. Cooking time will vary slightly depending on your air fryer model and the size of your muffin tin cups, so start checking around the 10-minute mark.
  7. Once cooked, carefully remove the muffin tin from the air fryer. Let the egg bites cool in the tin for a few minutes before gently removing them. They can be enjoyed warm, or at room temperature.

Notes

Alternatively, you can reheat them in a microwave on medium power for 30-60 seconds. For frozen egg bites, reheat them directly from frozen in the air fryer at 300°F (150°C) for 8-10 minutes, or until heated through. Microwaving frozen egg bites will require a longer cook time and may result in a slightly different texture.
