For the Salad
  • 6 cups Watermelon Cubed, seedless
  • 2 cups Strawberries Hulled and sliced
  • 1.5 cups Blueberries Rinsed
  • 1 cup Blackberries Rinsed
  • 1 cup Raspberries Gently rinsed
For the Lime Drizzle
  • 1/4 cup Fresh Lime Juice
  • 2 tablespoons Honey or Maple Syrup Adjust to taste
  • 1 teaspoon Lime Zest From one lime
  • 1 tablespoon Fresh Mint Finely chopped, for garnish

  1. Prepare the dressing: In a small bowl, whisk together the fresh lime juice, honey (or maple syrup), and lime zest until well combined. Set aside.
  2. Prepare the fruit: Ensure the watermelon is cubed, strawberries are sliced, and all berries are gently washed and dried. Moisture is the enemy of fresh salad texture.
  3. Combine the fruit: In a large mixing bowl, gently combine the watermelon, strawberries, blueberries, blackberries, and raspberries. Be careful not to crush the softer berries.
  4. Dress the salad: Just before serving, drizzle the prepared lime dressing evenly over the fruit mixture. Gently toss the salad once or twice to coat the fruit lightly.
  5. Chill and serve: For best results, chill the salad for 15 minutes before serving to allow the flavors to meld slightly. Garnish with the finely chopped fresh mint.
  6. Note: If preparing more than 2 hours in advance, store the fruit and dressing separately and combine just before serving to prevent the watermelon from releasing too much liquid.

Notes

This salad is best consumed the day it is made. For an extra twist, you can add 1/2 cup of cubed cantaloupe or honeydew melon.
