Ingredients
  

  • 1 pound sirloin steak, thinly sliced against the grain
  • 1 pound broccoli florets
  • 8 ounces ramen noodles (instant ramen packets without the seasoning works perfectly)
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil (or other high-heat oil)
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup beef broth (or water)
  • Red pepper flakes, to taste (optional)
  • Toasted sesame seeds, for garnish (optional)
  • Green onions, sliced, for garnish (optional)

Method
 

  1. In a medium bowl, combine the thinly sliced sirloin steak with 1 tablespoon of soy sauce, 1 teaspoon of cornstarch, and 1 teaspoon of Shaoxing wine. Toss to coat the beef evenly. Let it marinate for at least 10 minutes while you prepare the other ingredients. This helps tenderize the beef and creates a lovely coating for stir-frying.

  2. Bring a pot of salted water to a boil. Add the broccoli florets and blanch for 1-2 minutes, just until they turn bright green and are slightly tender-crisp. Immediately drain the broccoli and rinse under cold water, or plunge it into an ice bath to stop the cooking process and preserve its vibrant color and texture. Drain well and set aside.

  3. Cook the ramen noodles according to package directions, omitting the seasoning packets. Typically, this involves boiling them for about 3-4 minutes until al dente. Drain the noodles and toss them with a teaspoon of sesame oil to prevent them from sticking together. Set aside.

  4. In a small bowl, whisk together the remaining soy sauce (about 3 tablespoons), oyster sauce, hoisin sauce, beef broth (or water), and the remaining 1 teaspoon of Shaoxing wine. Set this sauce mixture aside for easy addition to the stir-fry.

  5. Heat the vegetable oil in a large skillet or wok over high heat until shimmering. Add the marinated beef in a single layer (you may need to cook in batches to avoid overcrowding, which can lead to steaming instead of searing). Stir-fry for 1-2 minutes per side, until browned and just cooked through. Remove the beef from the skillet and set aside with the noodles.

  6. Reduce the heat to medium-high. Add the minced garlic and grated ginger to the same skillet. Stir-fry for about 30 seconds until fragrant, being careful not to burn the garlic.

  7. Add the blanched broccoli florets to the skillet with the garlic and ginger. Stir-fry for another minute. Pour in the prepared sauce mixture and bring it to a simmer. Let it cook for 1-2 minutes, stirring, until the sauce thickens slightly.

  8. Return the cooked beef and drained ramen noodles to the skillet with the broccoli and sauce. Toss everything together gently to ensure the noodles and beef are well coated in the glossy sauce. If you like a little heat, sprinkle in some red pepper flakes.
