BBQ Chicken Cottage Cheese Bowl

Ingredients
  

  • 1.5 cups cooked chicken breast, shredded or diced
  • 1 cup cottage cheese full-fat or low-fat, your preference
  • 1/4 cup your favorite BBQ sauce
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • salt and freshly ground black pepper to taste
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
Optional toppings
  • sliced avocado
  • corn kernels
  • black beans
  • a drizzle of hot sauce
  • a sprinkle of shredded cheddar cheese

Method
 

  1. If your chicken isn't already cooked, start by cooking chicken breasts until thoroughly done. You can bake, grill, or pan-fry them. Once cooked, allow the chicken to cool slightly, then shred or dice it into bite-sized pieces.
  2. In a medium bowl, combine the shredded or diced chicken with the BBQ sauce. Add the smoked paprika, garlic powder, salt, and pepper. Stir everything together until the chicken is evenly coated.

  3. Spoon the cottage cheese into the bottom of your serving bowl. This will form the creamy, protein-rich base of your bowl.

  4. Top the layer of cottage cheese generously with the BBQ chicken mixture. Distribute it evenly over the cheese.
  5. Sprinkle the diced red onion and chopped fresh cilantro over the chicken. Now is also the time to add any of your other favorite optional toppings like avocado, corn, or black beans.
