- Preheat your oven to 350°F (175°C). Lightly grease an 8x8 inch baking pan or line it with parchment paper, leaving an overhang on the sides to easily lift the bars out later.
- In a large mixing bowl, combine the mashed ripe bananas, melted unsalted butter, packed light brown sugar, and vanilla extract. - Add the old-fashioned rolled oats to the bowl. If you're using them, fold in the chopped walnuts or pecans and chocolate chips at this stage. - Pour the mixture into the prepared baking pan. Using a spatula or the back of a spoon, spread the mixture evenly to fill the pan. Press down gently to ensure a compact and even layer.
- Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown and the center is set. The baking time can vary slightly depending on your oven.
- Once baked, remove the pan from the oven and let the Banana Oatmeal Bars cool completely in the pan on a wire rack. This is a crucial step for them to set properly and be easy to cut.
- Once cooled, use the parchment paper overhang to carefully lift the entire slab out of the pan. Place it on a cutting board and cut into desired bar shapes (e.g., squares or rectangles). Serve immediately or store for later.
Notes
Store cooled bars in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for up to 5 days or freeze for up to 3 months. Reheat gently in a toaster oven or microwave.
