Ingredients
  

  • 1 ripe banana, mashed (about 1/2 cup)
  • 1/2 cup rolled oats (old-fashioned oats work best)
  • 1 cup milk of choice (dairy, almond, soy, oat milk all work well)
  • 1 tablespoon chia seeds
  • 1 tablespoon sweetener of choice (maple syrup, honey, or agave)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch salt
  • 1/4 cup chopped walnuts or pecans Optional

Method
 

  1. In a medium bowl or directly in your jar/container, thoroughly mash one ripe banana. The riper the banana, the sweeter and more flavorful your oats will be. Aim for a smooth consistency with minimal lumps.

  2. Add the rolled oats, chia seeds, cinnamon, nutmeg, and a pinch of salt to the mashed banana. Stir everything together to ensure the spices and chia seeds are evenly distributed among the oats and banana.

  3. Pour in your milk of choice and add your chosen sweetener. Stir vigorously until all ingredients are well combined. Make sure there are no dry clumps of oats or chia seeds lurking at the bottom.

  4. If you're using chopped walnuts or pecans for that extra banana bread crunch, gently fold them into the mixture now. This ensures they are dispersed throughout the oats.

  5. Spoon the mixture into your preferred overnight oats container. This could be a single jar, a Tupperware, or individual serving glasses. Seal the container tightly.
  6. Place the sealed container in the refrigerator and let it chill for at least 4 hours, but preferably overnight. This allows the oats and chia seeds to absorb the liquid, creating a thick, pudding-like consistency.
  7. In the morning, give your Banana Bread Overnight Oats a good stir. If it’s too thick for your liking, add a splash more milk until you reach your desired consistency. Top with extra banana slices, a sprinkle of cinnamon, a dollop of yogurt, or a drizzle of nut butter if desired.

Notes
