Ingredients
  

  • 2 boneless, skinless chicken breasts (about 6-8 ounces each)
  • 1 tablespoon olive oil
  • to taste Salt and freshly ground black pepper
  • 1/2 cup balsamic glaze (store-bought or homemade)
  • 1/4 cup chopped fresh basil leaves
  • 1/2 cup cherry tomatoes, halved
  • 4 ounces fresh mozzarella cheese, sliced into 1/2-inch thick rounds
  • Optional Red pepper flakes for a touch of heat

Method
 

  1. If your chicken breasts are very thick, you can lightly pound them to an even thickness (about 3/4 inch). This ensures they cook evenly and quickly. Pat the chicken dry with paper towels, then season generously on both sides with salt and freshly ground black pepper.

  2. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once the oil is shimmering, carefully add the seasoned chicken breasts. Sear for 4-5 minutes per side, until golden brown and a beautiful crust has formed. You’re not looking to cook them all the way through at this stage, just build that delicious flavor. Preheating your oven to 375°F (190°C) during this step is also a good idea.

  3. Once seared, arrange the chicken breasts in the skillet. Drizzle the balsamic glaze evenly over the top of each chicken breast. Scatter the halved cherry tomatoes around the chicken in the skillet. Sprinkle generously with fresh basil.

  4. Place the slices of fresh mozzarella cheese on top of each chicken breast and over the tomatoes. If you enjoy a little heat, sprinkle with a pinch of red pepper flakes now.

  5. Carefully transfer the oven-safe skillet to your preheated oven. Bake for 10-15 minutes, or until the chicken is cooked through (an internal temperature of 165°F or 74°C) and the mozzarella is melted, bubbly, and lightly golden. The tomatoes will have softened and mingled with the balsamic glaze, creating a luscious sauce.

Notes
