  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to hold the nectarine halves in a single layer.
  2. Place the nectarine halves cut-side up in the prepared baking dish.
  3. Drizzle 1 tablespoon of honey evenly over the cut surface of each nectarine half. Sprinkle generously with ground cinnamon.
  4. Dot the top of each nectarine half with a small piece of butter.
  5. Bake for 20-25 minutes, or until the nectarines are tender when pierced with a fork and the honey mixture is bubbling.
  6. Remove from the oven. If desired, sprinkle with toasted sliced almonds before serving.
  7. Serve warm, perhaps with a dollop of vanilla yogurt or a scoop of ice cream.

Notes

Select nectarines that are slightly firm but yield slightly to gentle pressure. Overripe fruit may turn too mushy during baking. This dish pairs beautifully with a drizzle of balsamic glaze if you prefer a touch of acidity.
