  • 1 block feta cheese preferably Greek, in brine (7-8 ounces)
  • 1.5 pounds large shrimp peeled and deveined
  • 1 pint cherry tomatoes halved
  • 1/4 cup extra virgin olive oil plus more for drizzling
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes optional, for a touch of heat
  • salt and freshly ground black pepper to taste
  • fresh parsley chopped (for garnish)
  • Crusty bread or pasta for serving

Method
 

  1. Preheat your oven to 400°F (200°C). Select a baking dish that is large enough to comfortably hold the feta cheese in the center and allow space for the shrimp and tomatoes to spread out. An 8x8 inch or 9x13 inch baking dish, or a large oven-safe skillet, will work beautifully.
  2. Place the block of feta cheese in the center of your chosen baking dish. Scatter the halved cherry tomatoes all around the feta.

  3. Drizzle 1/4 cup of extra virgin olive oil evenly over the feta and tomatoes. Sprinkle the minced garlic, dried oregano, and red pepper flakes (if using) over everything. Season generously with salt and freshly ground black pepper. Remember that feta is quite salty, so adjust your salt accordingly.

  4. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the tomatoes have burst and softened, and the feta cheese is bubbling and beginning to turn golden brown around the edges. This allows the flavors to meld and the tomatoes to release their juices, creating a delicious base.
  5. Carefully remove the baking dish from the oven. Artfully arrange the peeled and deveined shrimp on top of the softened tomatoes and feta. Ensure the shrimp are in a single layer to cook evenly.

  6. Return the baking dish to the oven and bake for another 5-7 minutes, or until the shrimp are pink, opaque, and cooked through. Be careful not to overcook the shrimp, as they can become tough.
  7. Once the shrimp are cooked, remove the baking dish from the oven. You can gently stir everything together with a spoon or fork, allowing the creamy, melted feta to mingle with the tomato juices and create a luscious sauce. Drizzle with a little extra olive oil if desired and sprinkle generously with fresh, chopped parsley for a burst of freshness and color. Serve immediately with crusty bread or pasta.

Notes

The flavors tend to meld even further overnight, making it just as delicious the next day. To reheat, gently warm the dish in a skillet over low heat, stirring occasionally, or microwave it on a low setting until heated through. Be mindful not to overcook the shrimp when reheating.
