Ingredients
  

For the Filling
  • 1 lb Ground Turkey Or lean ground beef
  • 1 tbsp Taco Seasoning Or 1 tsp chili powder, 1/2 tsp cumin, 1/4 tsp onion powder
  • 1/4 cup Water
  • 1 clove Garlic Minced
For the Boats and Toppings
  • 4 large Avocados Ripe but firm
  • 1/2 cup Shredded Lettuce
  • 1/4 cup Salsa Your favorite kind
  • 4 tbsp Plain Greek Yogurt Or sour cream, for topping
  • 2 tbsp Fresh Cilantro Chopped, for garnish
  • 1 medium Lime Juiced, divided

Method
 

Instructions
  1. Prepare the filling: In a medium skillet over medium heat, cook the ground turkey (or beef) with the minced garlic until browned and fully cooked through. Drain any excess fat.
  2. Season the meat: Stir in the taco seasoning and 1/4 cup of water into the skillet. Simmer for 3-5 minutes until the liquid has mostly evaporated and the meat is well-coated.
  3. Prepare the avocado boats: Slice the avocados in half lengthwise and remove the pits. Scoop out about 1 tablespoon of avocado flesh from the center of each half to create a deeper well for the filling. Immediately squeeze 1 teaspoon of fresh lime juice over the exposed avocado flesh to prevent browning.
  4. Assemble the boats: Place each avocado half on a serving plate. Spoon the warm taco meat evenly into the hollowed-out centers of the avocados.
  5. Top the tacos: Top each meat-filled avocado with shredded lettuce, a dollop of Greek yogurt (or sour cream), and a spoonful of salsa.
  6. Garnish and serve: Sprinkle with chopped fresh cilantro and the remaining lime juice. Serve immediately.

Notes

These boats are naturally gluten-free and low-carb. For extra flavor, briefly warm the avocado halves in the oven (350°F for 5 minutes) before filling, though this is optional.
