Ingredients
  

For the Peach Filling
  • 6 cups Fresh or frozen peaches Sliced, about 8 medium peaches
  • 3/4 cup Granulated sugar Adjust to peach sweetness
  • 1/4 cup Brown sugar, packed
  • 1/4 cup All-purpose flour For thickening
  • 1 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg
  • 1 tablespoon Lemon juice Freshly squeezed
  • 2 tablespoons Unsalted butter Cut into small pieces
For the Biscuit Topping
  • 2 cups All-purpose flour
  • 1/4 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup Cold unsalted butter Cubed
  • 3/4 cup Milk or buttermilk Plus extra for brushing

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. Prepare the filling: In a large bowl, gently toss the sliced peaches with the granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice until evenly coated. Pour the peach mixture into the prepared baking dish and dot the top evenly with the small pieces of butter.
  3. Prepare the topping: In a separate medium bowl, whisk together the 2 cups of flour, 1/4 cup sugar, baking powder, and salt. Cut in the cold, cubed butter using a pastry blender or two knives until the mixture resembles coarse crumbs.
  4. Add the milk or buttermilk to the dry ingredients and stir just until combined to form a shaggy dough. Avoid overmixing.
  5. Drop spoonfuls of the biscuit dough evenly over the top of the peach filling, leaving small gaps between the dough mounds. Brush the top of the biscuits lightly with extra milk and sprinkle with a touch more sugar, if desired.
  6. Bake for 40 to 45 minutes, or until the topping is golden brown and the peach filling is bubbly and thickened. Let cool for at least 15 minutes before serving warm.

Notes

For the best flavor, use ripe, sweet peaches. If using frozen peaches, do not thaw them before mixing with the sugar and spices. Serve immediately with a scoop of high-quality vanilla bean ice cream or a dollop of fresh whipped cream.
