  • 1 cup Milk of choice (dairy, almond, soy, oat milk all work well)
  • 1 tablespoon Chia Seeds
  • 1 tablespoon Maple Syrup or Honey (adjust to sweetness preference)
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon Vanilla Extract
  • 1/2 medium Apple, finely diced (any variety like Gala, Fuji, or Honeycrisp)
Optional Toppings
  • Chopped Walnuts or Pecans
  • extra cinnamon
  • a dollop of Greek yogurt or whipped cream

Method
 

  1. In a jar, bowl, or airtight container, add the rolled oats, chia seeds, ground cinnamon, and ground nutmeg. Stir these dry ingredients together to ensure the spices are evenly distributed.

  2. Pour in your milk of choice, maple syrup (or honey), and vanilla extract. Stir everything thoroughly until well combined. It's important to ensure the chia seeds are not clumped together at the bottom.

  3. Gently fold in the finely diced apple. Ensure the pieces are distributed throughout the mixture, allowing them to soften and infuse their flavor overnight.

  4. Cover the jar or container tightly. Place it in the refrigerator for at least 4 hours, but it's best to leave it overnight. This allows the oats and chia seeds to absorb the liquid, creating a thick, pudding-like consistency.
