- Prepare the apple topping: In a small saucepan, combine the diced apple, brown sugar, cinnamon, nutmeg, and lemon juice. Add 1 tablespoon of water if the mixture seems too dry.
- Cook the apples over medium heat, stirring occasionally, until the apples have softened slightly and the sugar has dissolved into a light syrup (about 5-7 minutes). Keep warm, or set aside.
- Prepare the Cream of Rice: In a separate small saucepan, bring the water or milk to a gentle boil over medium-high heat.
- Slowly whisk in the instant Cream of Rice cereal. Reduce the heat to low and continue stirring constantly for about 1 minute, or until the mixture has thickened to your desired consistency for a bowl.
- Pour the cooked Cream of Rice into your serving bowl. Ensure it is distributed evenly.
- Spoon the warm apple pie filling mixture evenly over the top of the cream of rice.
- Garnish with toasted nuts (if using) and a light drizzle of maple syrup before serving immediately.
Notes
For a richer flavor, substitute half the cooking liquid with apple juice instead of water/milk. If you don't have fresh apples, substitute with 1/4 cup of canned pie filling.
