  • 1/2 cup Instant Cream of Rice cereal
  • 1 cup Water or Milk (Dairy or Non-Dairy) Use milk for extra creaminess
Apple Pie Filling
  • 1 medium Apple Such as Honeycrisp or Granny Smith, diced (about 1 cup)
  • 1 tablespoon Brown Sugar Packed
  • 1/4 teaspoon Ground Cinnamon
  • Pinch Ground Nutmeg
  • 1 teaspoon Lemon Juice Freshly squeezed
Garnish (Optional)
  • 1 tablespoon Chopped Walnuts or Pecans Toasted
  • 1 teaspoon Maple Syrup For drizzling

  1. Prepare the apple topping: In a small saucepan, combine the diced apple, brown sugar, cinnamon, nutmeg, and lemon juice. Add 1 tablespoon of water if the mixture seems too dry.
  2. Cook the apples over medium heat, stirring occasionally, until the apples have softened slightly and the sugar has dissolved into a light syrup (about 5-7 minutes). Keep warm, or set aside.
  3. Prepare the Cream of Rice: In a separate small saucepan, bring the water or milk to a gentle boil over medium-high heat.
  4. Slowly whisk in the instant Cream of Rice cereal. Reduce the heat to low and continue stirring constantly for about 1 minute, or until the mixture has thickened to your desired consistency for a bowl.
  5. Pour the cooked Cream of Rice into your serving bowl. Ensure it is distributed evenly.
  6. Spoon the warm apple pie filling mixture evenly over the top of the cream of rice.
  7. Garnish with toasted nuts (if using) and a light drizzle of maple syrup before serving immediately.

Notes

For a richer flavor, substitute half the cooking liquid with apple juice instead of water/milk. If you don't have fresh apples, substitute with 1/4 cup of canned pie filling.
