  • 2 cups Unsweetened Almond Milk Use original or vanilla flavor
  • 1 tablespoon Maple Syrup Or to taste
  • 1/8 teaspoon Ground Cinnamon
  • Pinch Salt

  • 1 tablespoon Toasted Sliced Almonds
  • 1/2 teaspoon Vanilla Extract Added at the end

Instructions
  1. In a small saucepan, combine the almond milk, maple syrup, ground cinnamon, and salt.
  2. Heat the mixture over medium heat until it begins to simmer gently around the edges. Do not let it come to a rolling boil.
  3. Slowly whisk in the instant Cream of Rice cereal in a steady stream while continuously stirring the saucepan to prevent lumps from forming.
  4. Reduce the heat to low and continue stirring constantly for 1 to 2 minutes, or until the cereal thickens to your desired consistency. If it becomes too thick, add a splash more almond milk.
  5. Remove the saucepan from the heat. Stir in the vanilla extract (if using).
  6. Divide the hot cream of rice evenly between two bowls. Sprinkle with toasted sliced almonds before serving immediately.

Notes

For an even richer texture, you can substitute 1/4 cup of the almond milk with creamy full-fat coconut milk. Ensure you keep stirring vigorously when adding the cereal to prevent clumps.
