3 Ingredient Cottage Cheese Bagels

Ingredients
  

  • 2 cups full-fat cottage cheese Opt for full-fat for the best texture and flavor.
  • 2 cups all-purpose flour You can experiment with bread flour for a chewier crust, but all-purpose works wonderfully for a tender bagel.
  • 1 large egg This will be used as an egg wash for a golden-brown finish.

  • Large mixing bowl
  • Small Bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, combine the cottage cheese and the all-purpose flour. Mix with a spoon or a spatula until a shaggy dough begins to form.

  3. Turn the dough out onto a lightly floured surface. Knead for about 5-7 minutes, until the dough is smooth and elastic.
  4. Divide the dough into 6-8 equal portions. Roll each portion into a ball, and then use your thumb to create a hole in the center of each ball, stretching it slightly to form the classic bagel ring shape. You can also simply roll each portion into a rope and join the ends to make a ring. Aim for a consistent size for even baking.
  5. Place the shaped bagels on the prepared baking sheet, leaving a little space between them. In a small bowl, lightly whisk the large egg. Brush the tops and sides of each bagel generously with the egg wash. Now is the time to sprinkle on your favorite toppings, if using.

  6. Bake for 18-22 minutes, or until the bagels are golden brown and sound hollow when tapped on the bottom.
  7. Let the 3 ingredient cottage cheese bagels cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container in the refrigerator for up to 3-4 days. Freeze for longer storage, wrapped tightly. Reheat by toasting.
