- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine the cottage cheese and the all-purpose flour. Mix with a spoon or a spatula until a shaggy dough begins to form.2 cups full-fat cottage cheese, 2 cups all-purpose flour
- Turn the dough out onto a lightly floured surface. Knead for about 5-7 minutes, until the dough is smooth and elastic.
- Divide the dough into 6-8 equal portions. Roll each portion into a ball, and then use your thumb to create a hole in the center of each ball, stretching it slightly to form the classic bagel ring shape. You can also simply roll each portion into a rope and join the ends to make a ring. Aim for a consistent size for even baking.
- Place the shaped bagels on the prepared baking sheet, leaving a little space between them. In a small bowl, lightly whisk the large egg. Brush the tops and sides of each bagel generously with the egg wash. - Bake for 18-22 minutes, or until the bagels are golden brown and sound hollow when tapped on the bottom.
- Let the 3 ingredient cottage cheese bagels cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store in an airtight container in the refrigerator for up to 3-4 days. Freeze for longer storage, wrapped tightly. Reheat by toasting.
