Ingredients

  • 1 tablespoon butter
  • 1 small onion, diced
  • 1/4 cup all-purpose flour
  • 6 cups chicken broth
  • 4 medium potatoes, peeled and diced (about 2 cups)
  • 1 pound fresh string beans, trimmed and cut into 1-inch pieces (or frozen)
  • 1 cup milk or half-and-half
  • Salt and pepper to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add diced onion and cook until softened, 5-7 minutes.
  2. Sprinkle flour over the onions and stir continuously for 1-2 minutes to create a roux.
  3. Gradually whisk in the chicken broth and bring to a simmer.
  4. Add the diced potatoes and simmer until tender, about 15-20 minutes.
  5. Add the string beans and cook until tender, 5-10 minutes.
  6. Stir in the milk or half-and-half and heat through without boiling.
  7. Season with salt and pepper to taste.
  8. Optional: Garnish with fresh parsley before serving.
