Description

Dairy-Free Carrot Cake Banana Bread combines the best of both worlds, moist banana bread and spiced carrot cake, without any dairy. Perfectly sweet, warmly spiced, and topped with a creamy dairy-free frosting, this loaf is a crowd-pleaser for brunch or an afternoon snack.

  • 3 ripe bananas, mashed
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup unsweetened applesauce
  • 1/4 cup dairy-free milk (almond, soy, or oat)
  • 1 tsp vanilla extract
  • 1 cup shredded carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 4 oz dairy-free cream cheese, softened
  • 1/4 cup dairy-free butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Mash ripe bananas in a large bowl until smooth, leaving a few small chunks.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Stir granulated sugar, brown sugar, applesauce, dairy-free milk, and vanilla extract into the mashed bananas.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in shredded carrots and nuts (if using).
  7. Pour batter into prepared loaf pan and spread evenly.
  8. Bake 55–65 minutes, or until a wooden skewer comes out clean.
  9. Let bread cool in pan 10 minutes, then transfer to a wire rack to cool completely.
  10. Prepare frosting: Beat dairy-free cream cheese and butter until smooth. Gradually add powdered sugar and mix until combined. Stir in vanilla extract.
  11. Once bread is completely cooled, generously frost the loaf and serve.

Notes

For best results, use very ripe bananas and finely shred the carrots. Let the bread cool completely before frosting to prevent the topping from melting.
