Description

A hearty and comforting soup made with tender meats, root vegetables, and greens—perfect for cold winter days and cozy family dinners.


Ingredients

Scale
  • 2 tablespoons lard or butter
  • pounds cubed beef chuck or 1 smoked ham hock
  • 1 diced onion
  • 3 minced garlic cloves
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 8 cups beef or chicken broth
  • 3 chopped carrots
  • 3 chopped potatoes
  • 2 chopped parsnips
  • 4 cups shredded cabbage
  • 2 cups shredded kale
  • Salt and pepper to taste
  • Optional: Splash of apple cider vinegar

Instructions

  1. In a large Dutch oven, heat the lard or butter over medium-high heat.
  2. Add the beef or ham hock and brown on all sides.
  3. Remove meat and set aside. Lower heat to medium.
  4. Sauté the onion and garlic until translucent, about 5 minutes.
  5. Return the meat to the pot. Add bay leaves and thyme.
  6. Pour in broth and bring to a gentle boil.
  7. Simmer for 20 minutes, then add chopped carrots, potatoes, and parsnips.
  8. Continue simmering for another 20 minutes.
  9. Add shredded cabbage and kale, cook for 10 more minutes until wilted.
  10. Remove bay leaves. Season with salt and pepper.
  11. Optional: Add a splash of apple cider vinegar before serving.

Notes

For best results, use fresh, locally-sourced vegetables. Soup can be made a day ahead to enhance the flavor.
