  • 1 cup Amish Friendship Bread starter
  • 1 cup all-purpose flour (for starter feeding)
  • 2 cups all-purpose flour (for dough)
  • 1 cup granulated sugar (for starter feeding)
  • 1 cup granulated sugar (for dough)
  • 1/2 cup packed brown sugar
  • 1 cup pumpkin puree (not pie filling)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Day 1–5: Stir your starter daily with a non-metal spoon in a non-metal bowl. Keep it at room temperature.
  2. Day 6: Feed the starter with 1 cup flour, 1 cup sugar, and 1 cup milk. Stir until combined.
  3. Day 7: Preheat oven to 325°F (160°C). Grease and flour a 9×5 inch loaf pan.
  4. Measure out 1 cup of starter to use. Save or share the rest.
  5. In a large bowl, mix pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
  6. Add granulated and brown sugar to wet mixture and mix well.
  7. In another bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt.
  8. Add dry ingredients to wet mixture, alternating with milk, starting and ending with dry. Mix until just combined.
  9. Stir in 1 cup of Amish Friendship Bread starter.
  10. Pour batter into the prepared loaf pan.
  11. Bake for 50–60 minutes, until a wooden skewer inserted comes out clean.
  12. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use an active and bubbly starter. Don’t overmix the batter. Check doneness with a skewer. Add chocolate chips or nuts for variation. Serve with cream cheese frosting, whipped cream, apple cider, or vanilla ice cream. Store in an airtight container for up to 3 days at room temp or 5 days in fridge. Can be frozen for up to 2–3 months.
