  • **For coating (choose one or a combination):**
  • 1 cup (170g) semi-sweet or dark chocolate, chopped
  • ¼ cup (28g) crushed candy canes
  • ¼ cup (28g) festive holiday sprinkles
  • Extra powdered sugar or cocoa powder

Instructions

  1. **Prepare Your White Chocolate Base:** Melt the chopped white chocolate in a double boiler or microwave until smooth. Set aside to cool slightly.
  2. **Cream Butter and Sugar:** In a large mixing bowl, cream softened unsalted butter and sifted powdered sugar until light and fluffy (2-3 minutes).
  3. **Add Flavor Extracts:** Beat in peppermint extract, vanilla extract, and salt until well combined.
  4. **Combine White Chocolate Mixture:** Gradually add the slightly cooled melted white chocolate to the butter and sugar mixture, beating until fully incorporated and smooth.
  5. **Chill the Truffle Mixture:** Cover and refrigerate for 1-2 hours, or until firm enough to roll.
  6. **Shape the Truffles:** Use a small cookie scoop to portion out the mixture. Roll quickly into smooth balls and place on a parchment paper-lined baking sheet.
  7. **Chill Again (Optional but Recommended):** Refrigerate rolled truffles for another 15-20 minutes for best coating results.
  8. **Prepare Coatings:** Melt coating chocolate if using. Place crushed candy canes, sprinkles, or powdered sugar in shallow dishes.
  9. **Coat the Truffles:** Dip chilled truffles into melted chocolate using a fork, tapping off excess, then immediately sprinkle with candy canes/sprinkles if desired. Or, roll directly in candy canes, sprinkles, or powdered sugar.
