- 1 cup active Amish starter
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup milk
- Optional Toppings: Cinnamon sugar, fresh blueberries, chocolate chips, chopped nuts
Instructions
- In a large bowl, combine the active Amish starter, sugar, vegetable oil, egg, and vanilla extract. Mix well.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with dry ingredients. Mix just until combined.
- Gently fold in optional toppings like blueberries, chocolate chips, or chopped nuts, if desired.
- Line a muffin tin with paper liners or grease it well.
- Fill each muffin cup about 2/3 full with the batter.
- If using cinnamon sugar, mix sugar and cinnamon separately and sprinkle on top.
- Preheat oven to 375°F (190°C). Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
Notes
Avoid overmixing the batter. Store muffins in an airtight container for up to 3 days at room temperature or freeze for up to 3 months.
