- 2 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup orange juice
- 1/2 cup melted butter
- 2 tablespoons orange zest
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 400°F (200°C). Line or grease a 12-cup muffin tin.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, orange juice, melted butter, orange zest, and vanilla extract.
- Pour wet mixture into dry ingredients and stir until just combined. Do not overmix.
- Fill muffin cups about 2/3 full.
- Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean.
- Cool muffins in the tin for a few minutes, then transfer to a wire rack to cool completely.
Notes
Use freshly squeezed orange juice and zest for the best flavor. Avoid overmixing the batter to keep the muffins light and tender.
