Description

Formavorscht, a hearty Mennonite farmer-style stew, is made with tender beef, potatoes, and vegetables simmered in a rich broth. Comforting, flavorful, and perfect for family dinners.


Ingredients

  • 1 pound beef stew meat, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas
  • 1/2 cup all-purpose flour
  • 1/2 cup cold water
  • Optional: Fresh parsley, chopped for garnish

Instructions

  1. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add beef stew meat and sear on all sides until browned. Remove and set aside.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute.
  3. Pour in beef broth and scrape the bottom to deglaze. Add diced tomatoes, potatoes, carrots, celery, thyme, salt, and pepper. Return beef to the pot.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour or until beef and vegetables are tender.
  5. Stir in frozen peas and cook for 5 minutes.
  6. In a small bowl, whisk flour and cold water until smooth. Slowly add to the stew, stirring constantly to thicken. Cook for 5-10 minutes.
  7. Ladle into bowls, garnish with fresh parsley if desired, and serve hot.

Notes

Best served hot with crusty bread. Letting the stew simmer longer deepens the flavor.
