- Crust:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 4–6 tablespoons ice water
- Filling:
- 2 cups small curd cottage cheese
- 3/4 cup granulated sugar
- 3 large eggs
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg (optional)
- 2 tablespoons melted butter
Instructions
- In a large bowl, whisk together flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Add ice water gradually until dough comes together. Form into a disk, wrap, and chill 30 minutes to 2 hours.
- Preheat oven to 375°F (190°C). Roll dough into a 12-inch circle and fit into a 9-inch pie plate. Trim and crimp edges. Prick bottom with a fork.
- In a mixing bowl, whisk together cottage cheese, sugar, eggs, flour, vanilla, melted butter, and nutmeg (if using) until smooth.
- Pour filling into crust. Bake 45-50 minutes until crust is golden and filling is set but slightly jiggly in the center. Cover edges with foil if browning too quickly.
- Cool on a wire rack for 2-3 hours before serving. Optionally dust with powdered sugar or extra nutmeg.
