- 1 (9-inch) unbaked pie shell (homemade or store-bought)
- 1 cup (200 g) packed light brown sugar
- 3 tablespoons all-purpose flour
- 1 pinch of salt
- 2 large eggs, lightly beaten
- 2 cups (480 ml) whole milk
- 4 tablespoons (1/2 stick; 56 g) unsalted butter, cut into pieces
- 1 teaspoon pure vanilla extract
- Optional: Whipped cream or whipped topping
- Optional: Toasted pecans or chopped walnuts
- Optional: Flaky sea salt
- Optional: Chocolate shavings or mini chocolate chips
Instructions
- Preheat your oven to 350 °F (175 °C). Place the unbaked pie crust in a pie dish and set aside.
- In a medium saucepan, whisk together brown sugar, flour, and salt until no lumps remain.
- Gradually pour in the milk while whisking constantly. Continue stirring over medium heat until the mixture thickens and just begins to bubble—about 5–7 minutes.
- Slowly whisk about ½ cup of the hot mixture into the beaten eggs to temper them. Then, pour the egg mixture back into the saucepan, whisking continuously.
- Cook for an additional 2–3 minutes, stirring constantly, until the custard is thick and creamy. Remove from heat.
- Add the butter and vanilla extract, stirring until the butter melts completely and the filling is glossy.
- Carefully pour the hot filling into the prepared pie shell. Smooth the top with a spatula.
- Bake in the preheated oven for 15 minutes to set the crust’s edges. Then, remove from oven and allow the pie to cool on a wire rack for 1–2 hours, or until room temperature.
- Refrigerate for at least 3 hours (overnight is best) to fully set the filling.
- Top with whipped cream, nuts, or a sprinkle of sea salt right before serving. Slice and savor!
