Ingredients

  • 1 (9-inch) unbaked pie shell (homemade or store-bought)
  • 1 cup (200 g) packed light brown sugar
  • 3 tablespoons all-purpose flour
  • 1 pinch of salt
  • 2 large eggs, lightly beaten
  • 2 cups (480 ml) whole milk
  • 4 tablespoons (1/2 stick; 56 g) unsalted butter, cut into pieces
  • 1 teaspoon pure vanilla extract
  • Optional: Whipped cream or whipped topping
  • Optional: Toasted pecans or chopped walnuts
  • Optional: Flaky sea salt
  • Optional: Chocolate shavings or mini chocolate chips

Instructions

  1. Preheat your oven to 350 °F (175 °C). Place the unbaked pie crust in a pie dish and set aside.
  2. In a medium saucepan, whisk together brown sugar, flour, and salt until no lumps remain.
  3. Gradually pour in the milk while whisking constantly. Continue stirring over medium heat until the mixture thickens and just begins to bubble—about 5–7 minutes.
  4. Slowly whisk about ½ cup of the hot mixture into the beaten eggs to temper them. Then, pour the egg mixture back into the saucepan, whisking continuously.
  5. Cook for an additional 2–3 minutes, stirring constantly, until the custard is thick and creamy. Remove from heat.
  6. Add the butter and vanilla extract, stirring until the butter melts completely and the filling is glossy.
  7. Carefully pour the hot filling into the prepared pie shell. Smooth the top with a spatula.
  8. Bake in the preheated oven for 15 minutes to set the crust’s edges. Then, remove from oven and allow the pie to cool on a wire rack for 1–2 hours, or until room temperature.
  9. Refrigerate for at least 3 hours (overnight is best) to fully set the filling.
  10. Top with whipped cream, nuts, or a sprinkle of sea salt right before serving. Slice and savor!
