- For the Crust:
- 1½ cups (190 g) all-purpose flour
- ½ cup (115 g) unsalted butter, cold and cubed
- 2 Tbsp granulated sugar
- Pinch of salt
- 3–4 Tbsp ice water
- For the Filling:
- 2 cups (450 g) full-fat cottage cheese, well-drained
- ¾ cup (150 g) granulated sugar
- 2 large eggs, at room temperature
- 1 tsp pure vanilla extract
- Zest of 1 lemon (about 1 Tbsp)
- 2 Tbsp cornstarch
- Optional Toppings:
- Fresh berries (strawberries, blueberries, raspberries)
- Honey or maple syrup
- Powdered sugar for dusting
Instructions
- Prepare the Crust
- In a large bowl, whisk together flour, sugar, and salt.
- Add cold, cubed butter and use a pastry cutter or fingers to blend until mixture resembles coarse crumbs.
- Drizzle ice water, 1 Tbsp at a time, and gently stir until dough just comes together.
- Form dough into a disk, wrap in plastic, and chill for 15 minutes.
- Preheat & Roll
- Preheat oven to 350 °F (175 °C).
- On a floured surface, roll chilled dough into a 12-inch circle.
- Transfer to a 9-inch pie pan, trim overhang, and crimp edges.
- Make the Filling
- In a blender or food processor, combine cottage cheese, sugar, eggs, vanilla, lemon zest, and cornstarch.
- Blend until completely smooth.
- Assemble & Bake
- Pour filling into crust and smooth top with spatula.
- Bake 35–40 minutes, until edges are set and center jiggles slightly.
- Turn off oven, crack door, and let pie rest inside for 10 minutes.
- Cool & Serve
- Cool pie completely on wire rack (about 1 hour).
- Chill at least 2 hours before serving.
- Top with berries, honey, or powdered sugar as desired.

Ensure the cottage cheese is well-drained for the smoothest texture. Cool the pie gradually to prevent cracks.
