Description

Creamy, flavorful, and surprisingly simple—Hutterite Schuten Pie is the cozy cottage cheese pie your family will fall in love with. A tender, buttery crust cradles a velvety filling of cottage cheese sweetened with a hint of lemon zest. Rustic and ready in under an hour, it’s tradition baked into every bite.

  • For the Crust:
  • 1½ cups (190 g) all-purpose flour
  • ½ cup (115 g) unsalted butter, cold and cubed
  • 2 Tbsp granulated sugar
  • Pinch of salt
  • 34 Tbsp ice water
  • For the Filling:
  • 2 cups (450 g) full-fat cottage cheese, well-drained
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 tsp pure vanilla extract
  • Zest of 1 lemon (about 1 Tbsp)
  • 2 Tbsp cornstarch
  • Optional Toppings:
  • Fresh berries (strawberries, blueberries, raspberries)
  • Honey or maple syrup
  • Powdered sugar for dusting

Instructions

  1. Prepare the Crust
    • In a large bowl, whisk together flour, sugar, and salt.
    • Add cold, cubed butter and use a pastry cutter or fingers to blend until mixture resembles coarse crumbs.
    • Drizzle ice water, 1 Tbsp at a time, and gently stir until dough just comes together.
    • Form dough into a disk, wrap in plastic, and chill for 15 minutes.
  2. Preheat & Roll
    • Preheat oven to 350 °F (175 °C).
    • On a floured surface, roll chilled dough into a 12-inch circle.
    • Transfer to a 9-inch pie pan, trim overhang, and crimp edges.
  3. Make the Filling
    • In a blender or food processor, combine cottage cheese, sugar, eggs, vanilla, lemon zest, and cornstarch.
    • Blend until completely smooth.
  4. Assemble & Bake
    • Pour filling into crust and smooth top with spatula.
    • Bake 35–40 minutes, until edges are set and center jiggles slightly.
    • Turn off oven, crack door, and let pie rest inside for 10 minutes.
  5. Cool & Serve
    • Cool pie completely on wire rack (about 1 hour).
    • Chill at least 2 hours before serving.
    • Top with berries, honey, or powdered sugar as desired.

Ensure the cottage cheese is well-drained for the smoothest texture. Cool the pie gradually to prevent cracks.
