All the fresh ingredients you need for a traditional Hutterite sausage soup.

Instructions

Heat olive oil in a large soup pot over medium heat. Add sliced sausage and cook until lightly browned, about 5–7 minutes.

Add onion, garlic, carrots, and celery. Sauté for 5 minutes until the vegetables are softened.

Stir in the cubed potatoes, white beans, thyme, bay leaf, salt, and pepper.

Pour in chicken broth and bring the mixture to a boil.

Reduce the heat to low, cover, and simmer for 25–30 minutes or until potatoes are fork-tender.

Remove the bay leaf. Taste and adjust seasoning as needed.

Serve hot, garnished with fresh parsley if desired.

Notes

You can swap in Italian sausage, kielbasa, or turkey sausage.

Add a splash of cream at the end for a rich, creamy version.

To make ahead, store the soup in the fridge for up to 4 days or freeze for up to 2 months.

This soup pairs wonderfully with crusty bread or a fresh side salad.

Try blending a small portion of the soup and stirring it back in for added thickness.
