Ingredients
- 1 lb smoked sausage, sliced into rounds
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 medium potatoes, peeled and cubed
- 1 can (15 oz) Hutterite beans or white beans, drained and rinsed
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish (optional)

Instructions
Heat olive oil in a large soup pot over medium heat. Add sliced sausage and cook until lightly browned, about 5–7 minutes.
Add onion, garlic, carrots, and celery. Sauté for 5 minutes until the vegetables are softened.
Stir in the cubed potatoes, white beans, thyme, bay leaf, salt, and pepper.
Pour in chicken broth and bring the mixture to a boil.
Reduce the heat to low, cover, and simmer for 25–30 minutes or until potatoes are fork-tender.
Remove the bay leaf. Taste and adjust seasoning as needed.
Serve hot, garnished with fresh parsley if desired.

You can swap in Italian sausage, kielbasa, or turkey sausage.
