- 4 cups (500g) all-purpose flour
- 2 teaspoons (7g) instant yeast
- 1/4 cup (50g) granulated sugar
- 1 teaspoon (6g) salt
- 1 cup (240ml) warm milk (110-115°F / 43-46°C)
- 1/2 cup (120ml) warm water (110-115°F / 43-46°C)
- 2 large eggs
- 1/4 cup (57g) unsalted butter, melted
- 1 egg beaten with 1 tablespoon water (optional, for egg wash)
Instructions
- In a large bowl, combine warm milk, warm water, and sugar. Stir to dissolve sugar. Sprinkle yeast and let sit 5-10 minutes until foamy.
- Add melted butter and eggs to the yeast mixture and whisk to combine.
- Gradually add flour and salt, mixing until a shaggy dough forms.
- Knead on a floured surface for 8-10 minutes (or 6-8 minutes in a stand mixer) until smooth and elastic.
- Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-1.5 hours or until doubled.
- Punch down the dough, divide into 12 equal pieces, and shape into smooth balls.
- Place buns on a parchment-lined baking sheet, cover, and let rise 30-45 minutes until almost doubled.
- Preheat oven to 375°F (190°C).
- Brush tops with egg wash if desired.
- Bake 15-20 minutes, until golden brown and hollow-sounding when tapped.
- Cool on a wire rack before serving.
Notes
For best results, ensure milk and water are at the right temperature (110-115°F) to properly activate the yeast. These buns are delicious warm with butter, jam, or alongside soups and stews.
