Description

Soft, fluffy, and slightly sweet, these Hutterite Buns | Brötchen are perfect for breakfast, lunch, or dinner. Easy to make at home, they melt in your mouth and pair wonderfully with both sweet and savory toppings.


Ingredients

  • 4 cups (500g) all-purpose flour
  • 2 teaspoons (7g) instant yeast
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon (6g) salt
  • 1 cup (240ml) warm milk (110-115°F / 43-46°C)
  • 1/2 cup (120ml) warm water (110-115°F / 43-46°C)
  • 2 large eggs
  • 1/4 cup (57g) unsalted butter, melted
  • 1 egg beaten with 1 tablespoon water (optional, for egg wash)

Instructions

  1. In a large bowl, combine warm milk, warm water, and sugar. Stir to dissolve sugar. Sprinkle yeast and let sit 5-10 minutes until foamy.
  2. Add melted butter and eggs to the yeast mixture and whisk to combine.
  3. Gradually add flour and salt, mixing until a shaggy dough forms.
  4. Knead on a floured surface for 8-10 minutes (or 6-8 minutes in a stand mixer) until smooth and elastic.
  5. Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-1.5 hours or until doubled.
  6. Punch down the dough, divide into 12 equal pieces, and shape into smooth balls.
  7. Place buns on a parchment-lined baking sheet, cover, and let rise 30-45 minutes until almost doubled.
  8. Preheat oven to 375°F (190°C).
  9. Brush tops with egg wash if desired.
  10. Bake 15-20 minutes, until golden brown and hollow-sounding when tapped.
  11. Cool on a wire rack before serving.

Notes

For best results, ensure milk and water are at the right temperature (110-115°F) to properly activate the yeast. These buns are delicious warm with butter, jam, or alongside soups and stews.
